Healthy and Economical Cheesy Potato Soup

Directions
Heat olive oil in a large pot on medium high heat. Add the onions and 1/2 teaspoon of salt. Cook, stirring occasionally, until lightly browned and softened, about 5 minutes. Cut potatoes into small pieces and cook in salted water until soft, about 8 minutesIn a large saucepan, melt the butter over low heat. Whisk in the flour and onion and cook 1 minute. Slowly add the milk, stirring to blend. Bring to a simmer for 2-3 minutes, Add the potatoes and using a masher, break the potatoes up. Add more milk if needed to reach the right consistency then add the salt, black pepper and cayene pepper.Bring to a simmer and cook for 5 minutes to warm through stirring frequently.
