When the Acadian's migrated to Louisiana from the eastern Canadian province, Nova Scotia, corn was not a part of their diet. The local Native Americans introduced them to it. Since then corn has been the foundation to a number of dishes native to New Orleans, including cornbread, corn for crawfish boils, and maque choux. Maque choux (pronounced mock shoe) is said to be an Indian word.
Sustitutions
Substitute one can of Rotel for the Red and green bell peppers and jalapeno's. Instead of using heavy cream use low fat sour cream. To finish the dish garnish with fresh cilantro.
Cajun Maque Choux RecipeIngredients3 Tbsp butter or bacon drippings1/2 cup onion finely chopped1/2 cup red bell pepper finely chopped1 Tbsp minced jalapeno peppers1 Tbsp minced garlic2 16 oz bags frozen corn1/3 cup warm chicken stock1/8 tsp nutmeg1 ½ tsp Cajun seasoning1/2 cup heavy creamDirectionsMelt butter in a large sauce pan over medium heat. Add onions [link widoczny dla zalogowanych], red bell peppers and jalapeno peppers sauté for 3 to 4 minutes or until the onions are translucent.Add the garlic and sauté for an additional minute being careful not to burn it.Add the two bags of frozen corn to the pan with the onion and pepper mixture. Reduce heat to low and simmer for 5 to 7 minutes.Add 1/3 cup of warm stock and cover with a lid. If the mixture is too thick you can add stock or water at about a tablespoon at a time.Add nutmeg and the Cajun seasoning to the Maque Choux and cook for one minute to help the spices bloom and become fragrant.Add heavy cream around the edges of the pan [link widoczny dla zalogowanych], add the remaining ingredients and cook an additional 4 to 6 minutes. Adjust seasoning and serve hot.Variations
A store bought Rotisserie chicken can be added, simply remove the meat from the bones. Dice the meat and add it to the Maque Choux. A boneless skinless chicken breast can be seasoned and simply roasted or saute in olive oil to keep the calories and fat down in the dish. Garnish the dish with crisp cooked bacon. Round out the meal with a simple side salad and fresh crusty bread and you have a meal.
